Cooking steak can pose intimidating questions: What cut of meat is right for this dish? What are the benefits of the reverse sear? Can I adapt a grilling recipe for indoor cooking? How long is too long to marinate – and how much does marinating affect the flavor in the end, anyway? In this class, we’ll address all your concerns about cooking steak at home as we work with four different cuts: skirt, sirloin tips, boneless short ribs, and strip steaks. In addition to discussing how to choose and prepare the meat itself, we’ll explore options for perfect sauces and sides for some of our favorite steak dishes, from herbaceous, spicy chimichurri to bright, crunchy pear-cucumber salad. You’ll come away from this class feeling more confi dent in all things steak, from the moment you arrive at the butcher all the way to the very last bite.
