In this hands-on class, we’ll draw on culinary traditions as far-reaching as Korea, Greece, Iran and Mexico to change the way you approach soups and stews. We’ll demonstrate how using the same ingredients in multiple ways in a single dish creates complex flavor while keeping your shopping list short. We’ll remember that sometimes the goal of a wintry dish is to remind us of summer, thanks to the magic of ingredients like frozen peas, tangy yogurt and big handfuls of fresh herbs. Finally, you’ll come to understand when and how to use whole and ground spices to rapidly transform a dish. You’ll come away from this class ready to make soups and stews that do far more than just warm you up.
